Beef: All though we shop around for the best price on our beef products we only buy whole primal cuts of USDA Prime or USDA Choice grades. That means the beef is as close as we can get to an unaltered product from the supplier. No sprayed nitrogen. No ammonium hydroxide. No added oxygen. No Modified Atmoshpere Packaging (the plastic packages filled with gases we find in most chain stores now). We simply just don't shop at places that don't offer the best in options; regardless of price. So in case you missed it...we do NOT buy meat from Walmart and we do NOT buy frozen or previously frozen meat.
The Pork: Our most popular; the St. Louis Style Sparerib is 100% a natural pork product that is minimally processed. All of our St. Louis Style Spareribs come from one, trusted, USDA inspected supplier. Pork Butts; bone-in, bone-out prices vary greatly so we shop around for these items...However our Pulled Pork is just that; pulled! It's a texture thing; but trust, no knife has touched it if you got it from us. Lastly; we do NOT use pork that has been enhanced with water solutions (or anything else for that matter).
